You'd be hard-pressed to find a chef more committed to the idea of 'hospitality' than Shane, he even has the word tattooed on his forearm. And that tattoo, 'Fortis et Hospitalis' or 'Strength and Hospitality', is not just any skin art, it's the Delia family motto, brought to Australia by Shane's father who migrated there from Malta in 1970. It's also the guiding principle that Shane follows in his professional and personal life. Family is so central to Shane's existence that his awardwinning restaurant in Melbourne is named after his wife, 'Maha'. It's here that he combines the Maltese culinary experience passed on to him by his family with the complex Lebanese cuisine taught by his wife's parents and reinvented with his own highly idiosyncratic flair. Rather than sit on his laurels, Shane wants to explore and push boundaries. So he's setting out for Malta, Lebanon, Iran and Turkey on a culinary pilgrimage to track down some of the oldest surviving recipes on Earth. Finding inspirations in the rural and regional contemporary cuisines of the people he meets, Shane then heads back to his Melbourne kitchen to put his unique take on some of the world's most ancient and influential culinary traditions.
